Moelleux au Chocolat or Molten Lava Cake

Moelleux au Chocolat is a delicious French recipe, a gooey melting in the middle chocolate pudding that will satisfy all chocolate lovers!
Every chocolate lover will testify to this: dark chocolate moelleux or lava cake is one of the most heavenly delights in the world – yet a lot of people are hesitant about making it. This recipe, however, guarantees the perfect end result with ease: a smooth and moist moelleux with a luscious centre of creamy dark chocolate boasting a rich chocolate taste. Chocolate desserts don’t get any better than this.

This dessert is loved by people of different region no one can resist to try this. :) In different counteries it is known by different name. In French, the terms for the chocolate cake are "gâteau fondant au chocolat" or simply "fondant au chocolat" A dessert composed of a small chocolate cake with crunchy rind and mellow filling that is conventionally served hot with vanilla ice cream on a plate. Molten lava is another term is very popular among people of certain region for this sweet and delicious dessert.

Ingredients:
200 grams or 7 ounces dark chocolate for baking (Good quality chocolate is preferable)
100 grams or 3.5 ounces butter
100 grams or 3.5 ounces brown sugar (light or dark)
2 tablespoons all purpose flour
3 eggs at room temperature
1 teaspoon vanilla extract

Directions:
Preheat oven to 250 C. Grease with butter 4 ramekin dishes and sprinkle some flour, it helps to come out the moelleux from ramekin and set aside.
Put dark chocolate and butter in a bowl and melt over a bain-marie until smooth or you can melt chocolate and butter in microwave oven with the interval of 10 seconds untill butter melts.
Mix altogether and let cool to room temperature. Meanwhile beat the eggs with brown sugar and vanilla extract using a whisk or mixer until thick and light yellow.
Add melted chocolate in the egg mixture and mix until well combined.

Sift the flour in chocolate and eggs mixture. Using a spatula fold in sifted flour.

Pour mixture into the prepared ramekin dishes and bake for about 10 minutes until raise to 1 inches above or there are some cracks on the side.
Let cool for 3-4 minutes and invert onto serving plate. Dust powdered sugar on top, and serve immediately with your choice of icecream or some fruits on top.

You can serve it still in the ramekin dish (in a very rustic French style!) with a raspberry coulis and vanilla ice cream. Enjoy and share your reviews with us :)
