Oreo Blueberry Cheesecake


Rich, velvety cheesecake combined with plump, ultra sweet blueberries makes for one of the most delectable desserts you'll ever eat. The best part? This beauty is no bake! Above all it's extremely delicious!

I am a big fan of cheesecake. I mean, how can you resist delicious things like this Cheese Cake. You can’t. It wouldn’t be right. ;) As this is the season of blueberries so I decided to combine these tasty thing into one great cheesecake. Everyone loved it and couldn't resist to ask for "just one more slice". :D

To start, you’ll make the crust. I used classic oreo crust this time around and loved it. Combine the crushed oreo and little butter to hold it all together, then press it into the pan. It takes for about 8 minutes in refrigerator to set and then it’s ready to go.

It’s a classic flavor combination and a cheesecake that really isn’t hard to make, though it takes a little time. The hardest part is waiting for everything to cool so you can dig in!

Pan Size: 8'' or 13 cm

Ingredients:

Crust:

Oreo crushed without cream 150 grams or 1 cup

Melted butter 40 gram or 3 tablespoons

Filling:

  • 8 ounces (300grams) cream cheese, room temperature

  • 50 grams sugar

  • Whipping or double cream 250ml or 1 cup

  • Plain yogart 50 grams

  • Vanilla extract 1 tablespoon

  • Sugar 30 grams

  • Water 1/2 cup

  • Milk 150ml

  • Agar agar powder or gelatine 2 gram or 1 teaspoon

For Layer 2 and 3:

Blueberries 200grams or 1-1/2 cups

Sugar 45 grams

Lemon juice 1 tablespoon

Water 1/2 cup

Agar agar powder or gelatine powder 2 grams or 1 teaspoon

Directions:

Make crust:

Combine Oreo without cream and melted butter in processor. Blend using on/off turns just until crumbs are moist. Press crumb mixture firmly onto bottom of 8'' or 13cm pan. Refrigerate for about 8 to 10 minutes.

Make filling:

Using electric mixer, beat cream cheese, sugar and vanilla extract in large bowl until will blended. Add plain yogart in cream cheese and blend for few more minutes and set aside.

By using electric mixer, beat the chilled cream untill soft peak forms and combine with the cream cheese mixture.

Divide the cream and cream cheese mixture into three portions.

Bring boil the milk with sugar and simmer it for 2-3 minutes and set aside untill comes at room temperature.

Mix water and agar agar powder or gelatine and boil it for 2-3 times. Add the agar agar or gelatine mixture into the warm milk mixture and stirr it continuously.

Combine the milk and agar agar or gelatine mixture with 1/3rd of cream cheese portion and Mix it well with ectrical beater.

Pour onto the layer of crushed oreo and put in the fridge for atleast 20 minutes or untill the second layer is preparing.

For second and third layer put blueberries in a pan. Add in lemon juice and sugar and let it simmer for 2-3 minutes. Squeeze the blueberries with spatula and strain the blueberry sauce with strainer.

Keep the 1/3rd of the blueberry sauce aside and in the remaining sauce add 1/2 cup water and agar agar or gelatine powder. Mix well and brings to boil for 2-3 times.

Mix the 1/3rd of the blueberries and agar agar mixture into the other 1/3rd of the cream cheese mixture and incorporate well. Pour into the first layer of cream cheese and regrigerate.

Mix the remaining blueberries and agar agar mixture into the last 1/3rd of the cream cheese mixture and incorporate well. Pour into the second layer of cream cheese and regrigerate for atleast 8 hours or overnight.

Make topping:

Decorate with blueberries, whipped cream and oreo cookies if desired. Spoon blueberry mixture over top of cake and enjoy!
