Strawberry Parfrait


Strawberry parfrait is a delicious, creamy and quick no bake strwberry dessert that's perfect for summer. A parfait is an American dessert that is a layered dessert which usually involves whipped cream or yogurt and fruits. There are so many variants of parfait, which means lots of deliciousness. For this strawberry parfait, I kept it simple but decided to add a twist to the dessert by using White chocolate.

I loved making this Strawberry Parfait for its simplicity, and fresh fruit always goes so well with whipped cream. The recipe below is a rough estimate as I served it in four dessert glasses, but that’s the beauty of this recipe, you can make it as you like.

A simple strawberry parfrait made with no eggs, no gelatin to stabilize and it takes about 20 minutes active time on your part.

Ingredients:

White chocolate chips 250 grams

1 cup or 250 ml heavy whipping cream, cold

1 teaspoon vanilla extract

Philadelphia cream cheese 1/3 cup or 75 grams

Strawberry puree 1 cup

Sugar optional (I didn't use)

Whipped cream, strawberries, sprinkles for garnishing

Instructions:

To make the parfrait, place the white chocolate chips into a medium sized bowl.

Heat heavy cream until it just starts to boil, then pour over the white chocolate chips. Cover with clear wrap and let sit for 3-4 minutes, then whisk until smooth.

Sometimes the white chocolate doesn’t completely melt. If that happens, microwave white chocolate mixture in 10 second intervals, stirring well between each interval, until smooth. Set aside to cool to room temperature.

Place strawberries and 6 tablespoons powdered sugar (optional), or you can add in the sugar in mixing the all ingredients acording to your taste, into your food processor. Process until smooth (you want a pureed texture). Strain the strawberry puree if you want it more smooth and creamy.

when the chocolate mixture comes at room temperature add in vanilla extract, cream cheese and strawberry puree.

Whip the mixture until well combined. Parfrait will seem a bit thin, but will thicken in the fridge.

Add strawberries in the base of the dessert glass, also I added some fruits cake in the base. Spoon the mixture into your serving dishes (think custard cups, mason jars).

Chill for at least 6 hours up to 24 hours. When ready to serve, you can top with whipped cream, chopped strawberries and shaved white chocolate.

This dessert is so easy to make and very delicious in taste. My daughters simple love it!
