Chocolate Sponge


This is one of my very easy Master Chocolate Cake sponge recipe, very airy, light and soft. It's simple yet special enough for any party cake! This sponge is perfect for black forest cakes also you can enjoy it with your favourite frosting.

This chocolate sponge requires only four ingredients to make and its been more than six years to make black forest cake with this fool proof chocolate sponge recipe. You just need plain flour, eggs, caster sugar or icing sugar and cocoa powder. O yeah nothing else no raising agent and it will be very fluffy soft and tasty.

So lets start with the ingredients and what should we need to bake this sponge?

Ingredients:

  • Eggs 6 - at room temperature

  • Plain All Purpose Flour 100 gram

  • Dutch Processed Cocoa Powder 20 gram

  • Icing sugar/ Caster sugar 120 gram

  • Baking powder 1 tsp (optional, I didn't use it)

Direstion:

Yields: One 8 inches round and 2 or 3 inches tall cake sponge

1. Gather the ingredients and measure them before starting. Sift the flour, cocoa powder and the baking powder(if you are using it) and set aside.

2. Take eggs at room temperature in a bowl. Turn the beater on and beat them.

3. When the eggs became slightly foamy, start adding the sugar slowly into the eggs into two batches.

4. Continue whipping the eggs and sugar until the mixture is pale yellow and drastically increased in volume. and beat untill stiff peaks are formed.

5. Now add 1/2 the flour and cocoa mixture into the egg mixture and carefully fold the dry ingredients with spatula until almost no streaks of flour are seen. Add the other half of the flour mixture and keep folding just until no streaks of flour are seen.

6. You must fold your dry ingredients very lightly. So, the air must stay in the egg mixture.

7. Cut out a parchment paper circle to place on the bottom of the pan and inside around the pan 3 inches tall from the pan size.

8. Pour the batter into the lined and greased baking pan.

9. Bang and shake the pan in a circular motion, back and forth also on the surface of the shelf couple of times to even the batter.

10. Bake in a preheated oven to 180C oven, on the middle rack for about 30-35 minutes or until a toothpick inserted in the middle comes out clean.

11. Let it cool completly and then move it out from the pan.

12. Frost it with your desired frosting and served it chill.
