Grilled/ Steak Lamb Rib Chops with Fresh Mango Chutney

Lamb's always a point of contention in my house. , But these perfectly grilled lamb chops are the best option for those who dont like lamb meat further because the grill makes just about everything better.
So whether you're a lamb lover, hater, or somewhere in between, it's worth trying your hand at lamb on the grill. It's one of the greatest ways to cook this incredible meat.

Serves 6
Ingredients:
Lamb Ribs Chops ½ kg
1 tbsp whole cumin seed (Zeera)
1 tbsp whole coriander seed (Sokha Dhania)
1 tbsp cinnamon (Daarcheni)
1 tbsp Whole spices powder (garam masala)
1 tsp. dried chilli flakes
1 tsp. turmeric

6 whole cardamom pods (Sabz Ilaichi)
Salt & pepper to taste
Oil for brushing
Mango Chutney:
2 peeled and diced fresh ripe mangos
1 tsp. minced fresh ginger
1 tsp. minced fresh shallot (Hara Pyaz)
1 tbsp. honey
Juice of 1 lime
Fresh chilli paste to taste
Salt & pepper to taste

Method:
Remove Lamb chops from freezer and allow the chops to come to room temperature. Grind all spices in coffee grinder and rub on steaks. Allow to marinate for one hour in refrigerator.
Heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another 5 minutes for medium-rare and 8-10 minutes for medium. Also you can Grill steaks on preheated barbecue until medium done.
Mix all ingredients for Mango Chutney and allow flavors to marinate for one hour.
Serve steak garnished with mango chutney and your choice of accompaniments.
